Actually, it would be "die Deutschen Luftköpfe". In the nominative form, we are looking at plural, which the male connotation of "der" would change to "die"; "Deutsch" would receive the adjective ending of -en because it is again plural, and then the plural form of "kopf" receives the vowel "ö" and the ending -e.
